Chinesisches Rindfleisch mit Brokkoli

Ingredients

Scale

500g Flanksteak

500 g Brokkoli

Für die Marinade:

3 EL Wasser

1 EL Speisestärke

1 EL neutrales Öl

1 EL Austernsauce

1/2 TL Natron

Für die Sauce:

150 ml Rinderfond

1 EL Zucker

2 EL helle Sojasauce

1 EL Austernsauce

1 TL geröstetes Sesamöl

1/2 TL Knoblauchpulver

1/2 TL frisch gemahlener schwarzer Pfeffer

Sonstiges:

3 cm frischer Ingwer, fein gehackt

23 Knoblauchzehen, fein gehackt

40 ml Wasser mit 2 EL Speisestärke

neutrales Öl für den Wok

Instructions

Das in mundgerechte und gegen die Faser geschnittene Flanksteak mit den Zutaten der Marinade in einer Schüssel vermischen. Die Mischung gut ins Fleisch bringen, bis die Flüssigkeit aufgesogen ist. Das Fleisch gekühlt für ca. eine Stunde marinieren.

Alle Zutaten für die Sauce vermischen und für später beiseite stellen. Anschließend den Brokkoli in mundgerechten Stücken für 1 Minute blanchieren, kalt abschrecken und im Sieb abtropfen lassen.

Den Wok stark erhitzen, 2 Esslöffel Öl hinzufügen und das Fleisch portionsweise 2–3 Minuten scharf anbraten. Danach aus dem Wok nehmen und beiseitestellen.

Anschließend Knoblauch und Ingwer in etwas Öl im Wok leicht braun rösten und mit der vorbereiteten Sauce ablöschen. Die Sauce aufkochen und etwas einreduzieren lassen.

Brokkoli und Rindfleisch zurück in den Wok geben und mit der Sauce vermengen. Die Konsistenz der Sauce dann mit der Wasser-Stärke-Mischung an die Vorlieben anpassen.
